KALAMATA OLIVE

Thinking of a lower ABV option so you could drink multiple!! Decided to make it with Johnnie Walker Black because of the smoke and vanilla notes. Paired with a kalamata olive infused Sweet Vermouth and Oloroso sherry. The nutty qualities of the sherry and the salinity of the olives work really nicely with the JW black and highlight it’s subtle qualities.

1 oz Johnnie Walker Black
0.5 oz Oloroso Sherry
0.75 oz Kalamata Olive infused Vermouth*
Barspoon of Demerara Syrup (2:1)
1 dash angostura
1 dash peychauds

Add all ingredients into a mixing glass. Add kold draft ice and stir until diluted and chilled. Pour into the chilled coupe glass and garnish.

Kalamata Vermouth:
100g Kalamata Olives (pitted)
400g Carpano Antica.
Vacuum Seal and let sit in the refrigerator for 24 hours. Strain and reserve liquid. Save olives for another use.
