Utilizing fat washing for texture and pairing it with the earthy and smokey qualities of the smoked malt. Staying true to the simple 3 ingredient build of an Old Fashioned.

2 oz Johnny Walker High Rye (Brown Butter Washed)*
0.25 oz Smoked Malt Demerara**
2 dashes of Angostura Bitters
1 each orange peel for garnish (express and tuck into the glass)

Put all ingredients into a mixing glass and fill to the top with ice. Stir until well diluted and chilled. Pour into a rocks glass or fancy glass of choice, over a large piece of ice or hand chipped chunk of ice. Garnish with expression of orange swath and place a manicured orange swath tucked into the cocktail between the glass and the ice chunk.

*Brown Butter Washed Johnnie Walker:
1 bottle Johnnie Walker
1 block of unsalted butter (227g), browned heavily
Add all ingredients together in a sous vide bag and cook at 70C for 1 hour. Pull from the bath and let the bag and it’s ingredients cool. Put the bag upright in the fridge, overnight, to let the fats solidify. Strain by cutting the bottom corner of the bag and letting just the liquid out. Reserver liquid and discard the butter fats.
**Malt Demerara:
33g Smoked Malt (not peated malt) - this can be purchased from a brew store
140g Water
140g Demerara Sugar
-Toast the malt in a pot until fragrant (this takes about 20 minutes, the malt will begin to pop a little bit and will get a nice dark brown color and release a lot of aroma). Once browned, add the water and sugar to the pot and mix well. Bring to a boil and then turn off the heat. Let the pan sit on the hot stove element and cover. Let steep for 1 hour and strain.
