THE HALF BLOOD PRINCE

  • A low ABV cocktail featuring a custom blend of Johnnie Walker High Rye inspired tea.

  • 0.25 oz Lemon

    0.25 oz 2:1 Honey Syrup

    0.75 oz 1:1 Fig Leaf Syrup

    1 oz Palo Cortado Sherry

    1 oz Johnnie Walker High Rye Blended Scotch

    3 oz Custom Johnnie Walker High Rye Cold Brew Tea

    Red Wine float

  • Ensuring all your ingredients are very cold, combine everything except the red wine into an ISI soda siphon and charge twice with CO2 cartridges. Let sit for 5mins, release the pressure and pour over ice in a Collins glass. Top with a float of red wine and garnish.

  • Collins glass

  • Orange and cherry flag made by wrapping an orange twist around a cherry and skewering through the middle.

  • Tall spear or cubes

  • 75g dried fig leaves

    1qt white sugar

    1 qt hot water

    Steep leaves in hot water for 5-15 min (to taste). Pass through chinois, add Sugar and adjust to 50 brix.

  • For 100g Tea:

    25g Heavily Smoked Lapsang Souchong

    25g Milky Oolong

    10g Gunpowder Pinhead

    10g Orange Pekoe

    10g Fruit + Spice

    10g Green Apple Green Mint

    5g Black Vanilla

    5g Toasted Almond

    Ratio of 50g tea :1000g room temp water. In the fridge 24hrs. Stir every 6-10 hrs and taste for tannins and concentration.
